Wash hands with warm, soapy water for 20 seconds.
Preheat oven to 400℉.
Spray a baking sheet with nonstick spray. Set aside.
Cut whole carrots in half or thirds, if desired. Trim carrots to be a similar size for even baking. Set aside.
In a bowl, combine oil, honey, garlic, and lemon juice.
Put carrots in a single layer on the baking sheet. Top with the honey sauce.
Sprinkle with salt and pepper to taste.
Bake for 25-30 minutes, or until tender and golden. Smaller carrots will roast faster.
