Wash hands with warm, soapy water for 20 seconds.
Mix salmon, potatoes, onion, parsley, egg, salt, and black pepper with 1 cup of bread, cracker, or cereal crumbs.
Shape into 6 patties. Pat into remaining 1/2 cup of bread, cracker, or cereal crumbs until covered.
Heat skillet or electric skillet on medium-high heat. Add oil and cook patties 4-5 minutes per side, until golden brown.
