Ingredients
- 1 15-ounce can or package water-packed salmon drained
- 1 ½ cups mashed potatoes from fresh, leftover, or instant potatoes
- ¼ cup green onion chopped
- ¼ cup parsley chopped
- 1 egg
- Salt and black pepper to taste
- 1 ½ cups bread crumbs, cracker crumbs, or corn/bran flakes cereal finely crushed
- 1 Tablespoon canola oil
Instructions
- Wash hands with warm, soapy water for 20 seconds.
- Mix salmon, potatoes, onion, parsley, egg, salt, and black pepper with 1 cup of bread, cracker, or cereal crumbs.
- Shape into 6 patties. Pat into remaining 1/2 cup of bread, cracker, or cereal crumbs until covered.
- Heat skillet or electric skillet on medium-high heat. Add oil and cook patties 4-5 minutes per side, until golden brown.
