Taco Soup

Whip up a fast, tasty dinner with this Taco Soup that uses the CNP Meat Sauce.

Ingredients

  • 2 cups CNP Meat Sauce (see Notes for recipe)
  • 2 teaspoons taco seasoning
  • 1 15-ounce can diced tomatoes
  • 2 cups cooked or canned beans kidney, pinto, black beans, etc.
  • 1 15-ounce can corn drained
  • 1 cup water
  • ½ cup low-fat cheddar cheese shredded
  • Toppings: corn chips, olives, avocado, low-fat sour cream optional

Instructions

  • Wash hands with warm, soapy water for 20 seconds.
  • Combine all ingredients except cheese and toppings in a saucepan and bring to a boil.
  • Simmer for 10 minutes or longer, if meat sauce is frozen. Add more water, if needed.
  • Ladle into bowl and sprinkle with shredded cheese and other toppings, as desired.
