Ingredients
- 2 whole tomatoes, chopped or 1 cup of can diced tomatoes, drained
- ¼ cup onion, diced
- 1 cup peaches, diced canned and drained, or fresh
- 15 ounces black beans, canned and drained or 2 cups cooked
- 1 Tablespoon cilantro optional
- ¼ teaspoon salt or to taste
- 1-2 teaspoons lemon or lime juice or to taste
Instructions
- Wash hands with warm, soapy water for 20 seconds.
- Mix all ingredients in a bowl. Toss well to blend. Chill before serving.
- Enjoy with fresh vegetables, whole grain chips, whole wheat crackers or in tacos or burritos
