Peach Black Bean Salsa

  • 2 whole tomatoes, chopped or 1 cup of can diced tomatoes, drained
  • ¼ cup onion, diced
  • 1 cup peaches, diced canned and drained, or fresh
  • 15 ounces black beans, canned and drained or 2 cups cooked
  • 1 Tablespoon cilantro optional
  • ¼ teaspoon salt or to taste
  • 1-2 teaspoons lemon or lime juice or to taste


  • Wash hands with warm, soapy water for 20 seconds.
  • Mix all ingredients in a bowl. Toss well to blend. Chill before serving.
  • Enjoy with fresh vegetables, whole grain chips, whole wheat crackers or in tacos or burritos
