Honey Garlic Roasted Carrots

Carrots go to a whole new flavor level with this honey garlic sauce.

Ingredients

  • 1 pound carrots washed and peeled
  • 2 Tablespoons oil
  • 2 Tablespoons honey
  • 1 teaspoon minced garlic
  • 2 teaspoons lemon juice
  • Salt and black pepper to taste
  • Nonstick spray

Instructions

  • Wash hands with warm, soapy water for 20 seconds.
  • Preheat oven to 400℉.
  • Spray a baking sheet with nonstick spray. Set aside.
  • Cut whole carrots in half or thirds, if desired. Trim carrots to be a similar size for even baking. Set aside.
  • In a bowl, combine oil, honey, garlic, and lemon juice.
  • Put carrots in a single layer on the baking sheet. Top with the honey sauce.
  • Sprinkle with salt and pepper to taste.
  • Bake for 25-30 minutes, or until tender and golden. Smaller carrots will roast faster.
