- 8 flour tortillas
- 2 cups fat-free refried beans
- 2 cups lettuce, shredded
- 1 cup tomatoes, diced
- 1 cup cheese, grated
- Wash hands with warm, soapy water for 20 seconds.
- Preheat oven to 350°F.
- Place tortillas on a cookie sheet. Lightly toast in oven until crispy (about 3-5 minutes.)
- Wash and chop lettuce and tomatoes.
- Spread two large tablespoons of refried beans on each tortilla.
- Top each tortilla with lettuce, tomatoes, and cheese.
