
Taco Soup

Ingredients
- 2 cups CNP Meat Sauce (see Notes for recipe)
- 2 teaspoons taco seasoning
- 1 15-ounce can diced tomatoes
- 2 cups cooked or canned beans kidney, pinto, black beans, etc.
- 1 15-ounce can corn drained
- 1 cup water
- ½ cup low-fat cheddar cheese shredded
- Toppings: corn chips, olives, avocado, low-fat sour cream optional
Instructions
- Wash hands with warm, soapy water for 20 seconds.
- Combine all ingredients except cheese and toppings in a saucepan and bring to a boil.
- Simmer for 10 minutes or longer, if meat sauce is frozen. Add more water, if needed.
- Ladle into bowl and sprinkle with shredded cheese and other toppings, as desired.
