  • For fresh, look for: round and firm, smooth skins with non-wilted leaves, if attached; small beets (up to 2 ½” across) tend to have more flavor
  • Good source of: vitamin C, fiber, folate, calcium
  • Good in: Soups, salads, blended into dips or sauces, dehydrated, sautéed, in smoothies, roasted
