Spinach Pesto Posted on December 20, 2021March 2, 2022 Ingredients1 Tablespoon minced garlic¼ cup nuts or sunflower seedsâ…“ cup grated parmesan cheese½ teaspoon salt1 cup packed basil leaves2 cups packed spinach leaves1 Tablespoon lemon juice½ cup olive oilDirectionsPut all ingredients into a food processor or blender and pulse until combined. Scrape down the sides of the blender once or twice to ensure everything is combined.If the pesto is too dry, add a little water or a olive oil and blend until combined.  Makes 1½ – 2 cups
