In the Kitchen: 10 Ways to Love Zucchini

Zucchini is one of the few vegetables that seems to grow well nearly everywhere in Wyoming. Perhaps the most well known of the summer squash, zucchini is a versatile veggie that works in recipes spanning from breakfast to dinner and in between.

If your garden has an abundance of zucchini, or you’ve been gifted some , make the most of it with these 10 ideas for using zucchini.

  1. Zucchini fries- Crispy on the outside and tender on the inside, zucchini fries offer a healthy alternative to traditionally fried potatoes. Try them as a snack or a side that goes well with burgers, grilled chicken, and so much more. Give our Baked Zucchini Fries recipe a try. 
  2. Veggie pizza– Pizza is made for tasty toppings, like zucchini! Try sautéing it first, or add it raw.
