Fast Fish Tacos Posted on February 13, 2023February 14, 2023 Ingredients1/2 cup low-fat plain yogurt or sour cream1/4 cup light mayonnaise1/2 cup cilantro (chopped)1 Tablespoon taco seasoning (Divided into 3 teaspoons)1 pound frozen fish nuggets or sticks1 Tablespoon canola oil2 Tablespoons lemon juice12 corn tortillas2 cups cabbage (shredded)1 cup tomatoes (diced)Lime wedges (optional)DirectionsWash hands with warm, soapy water.Combine yogurt, mayonnaise, cilantro, and 2 teaspoons of taco seasoning in a small bowl. Set in the refrigerator.Mix oil, lemon juice, and 1 teaspoon of taco seasoning in another bowl. Drizzle over fish nuggets and bake according to package instructions.Warm tortillas for 20-30 seconds in the microwave, if desired.Fill tortillas with fish nuggets. Cabbage Pancakes with Dill Sauce Posted on September 1, 2021October 25, 2021 IngredientsPancakes4 eggs1/2 cup flour2 cups shredded cabbage1 small carrot, grated2 green onions, thinly sliced1/2 cup shredded cheese1 teaspoon canola oilDirectionsWash hands with warm, soapy water for 20 seconds.Blend eggs. Add flour and mix until it resembles a loose batter. If the batter is thick and does not easily run off a spoon, at 1/4 cup of water.Add the vegetables and mix together until vegetables are coated.In a medium skillet, heat oil on medium heat. Reduce to medium-lowOnce hot, add 1/2 cup of cabbage mixture in a mound.
