Walnut Raisin Muffins Posted on March 8, 2023March 8, 2023 Ingredients2 1/2 cups all-purpose flour1 1/2 teaspoons baking powder1/4 teaspoon of salt4 Tablespoons sugar1 egg, beaten1/3 cup applesauce1 1/4 cups low-fat milk3/4 cup chopped walnuts3/4 cup raisinsNonstick spray or muffin tin papersDirectionsWash hands with warm, soapy water.Preheat oven to 400°F.Coat 12 muffin pan cups with nonstick spray or line with muffin papers.Combine flour, baking powder, and salt.In a separate bowl, blend together egg, sugar, applesauce and milk.Add egg mixture to dry ingredients. Fold in nuts and raisins.Stir until dry ingredients are moistened. Mixture should be lumpy.Fill each muffin tin 2/3 full.Bake at 400°F for 20-25 minutes.Makes 12 muffins Download Recipe
Green Bean & Walnut Casserole Posted on December 14, 2022December 14, 2022 IngredientsFilling2 Tablespoons butter or margarine4 ounces mushrooms, minced (optional)1 cup onion, minced1 can cream of mushroom soup½ cup low fat milk1 teaspoon soy sauceSalt and pepper to taste2 cans green beans, drainedNonstick sprayTopping2/3 cup breadcrumbs or crushed cereal2/3 cup chopped walnuts2 Tablespoons butter or margarine, melted½ cup minced onionDirectionsWash hands with warm, soapy waterPreheat oven to 350°F. Spray an 9×13-inch baking pan with nonstick spray and set aside.Melt butter or margarine in a medium saucepan over medium heat. Add mushrooms and onion. Cook, stirring frequently, for about 5 minutes.Add in cream of mushroom soup, soy sauce, and low-fat milk. Season with salt and pepper. Mix to combine. Turn off heat.Add canned green beans and sauce to baking pan; toss or stir to coat with mixture.In a bowl, stir together all topping ingredients and sprinkle on top of green bean mixture.Bake for 20 minutes or until topping is golden brown.Makes 12 servings Download Recipe
