Cinnamon Raisin Breakfast Mix

Ingredients

  • 1/4 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 cup margarine
  • 1 1/2 cups square, whole-grain corn cereal
  • 1 1/2 cups square, whole-grain rice cereal
  • 1/2 cups square, whole-grain wheat cereal
  • 1/2 cup raisins or dried cranberries
    Note: mix and match whole-grain cereal amounts based on what you have on hand and what is available at the store.
 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. In small bowl, mix sugar and cinnamon; set aside.
  3. In large microwavable bowl, microwave butter uncovered on High about 40 seconds, or until melted.
  4. Stir in cereals until evenly coated. Microwave uncovered for 2 minutes, stirring after 1 minute.
  5. Sprinkle half of the sugar mixture evenly over cereals; stir. Sprinkle with remaining sugar mixture; stir.
  6. Microwave uncovered for 1 minute.
  7. Stir in raisins or dried cranberries.
  8. Spread on paper towels or wax paper to cool.

Makes 10 servings

Baked Peanut Butter Oatmeal

Ingredients

  • 3 cups oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup peanut butter
  • 1/2 cup oil
  • 1/2 cup honey
  • 2 eggs, beaten
 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 350°F.
  3. Spray 9x-13-inch baking pan with cooking spray.
  4. Combine oatmeal, baking powder, salt, and milk in baking pan.
  5. In a separate bowl combine oil, honey, eggs, and peanut butter.
  6. Mix all ingredients together.
  7. Cover pan and store in fridge overnight or bake immediately.
  8. Bake at 350°F for 30 minutes.

Veggie Bagel Buddies

Ingredients

  • 3 whole wheat bagels
  • 2 tsp powdered ranch dressing
  • 3 oz low-fat cream cheese
  • 1/2 cup carrots, finely chopped
  • 1/2 cup cauliflower, finely chopped
  • 1/2 cup broccoli, finely chopped
  • 6 Tbsp reduced fat cheddar cheese, shredded

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Split whole wheat bagels into halves and lay face up on a baking sheet.
  3. Mix cream cheese with powdered ranch dressing. Spread onto each bagel half.
  4. Finely chop carrots, cauliflower, and carrots. Mix together in a bowl.
  5. Sprinkle vegetable mix on top of bagels. Top each bagel with 1 Tbsp cheddar cheese.

No Bake Peach Crisp

Ingredients

  • 1/8 teaspoon cinnamon
  • 2 four-ounce containers of diced peaches in 100% juice, drained
  • 2 Tablespoons low-fat granola
  • 4 Tablespoons low-fat yogurt

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Drain peaches (rinse if in syrup) and place in small bowl.
  3. Stir cinnamon into fruit.
  4. Divide fruit between two serving dishes.
  5. Sprinkle each dish with granola and top with yogurt.
  6. Top with more cinnamon if desired.

Berry Yogurt Muffins

Ingredients

  • 1 cup all-purpose flour 
  • 1 cup whole-wheat flour
  • 1/2 cup sugar
  • 1 1/2 tsp baking soda
  • 2 eggs
  • 1 cup plain non-fat yogurt
  • 1/4 melted butter
  • 1 tsp vanilla
  • 1 cup chopped strawberries
  • 1/2 cup blueberries

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 375°F. Spray a muffin tin with nonstick cooking spray or use paper baking cups.
  3. In a large bowl, sift together flours, sugar, and baking soda.
  4. In another bowl, beat eggs. Add yogurt, melted butter, and vanilla. Stir until blended.
  5. Pour the egg mixture into the flour mixture and stir until flour is moistened. The batter will be lumpy.
  6. Stir in berries.
  7. Spoon batter into muffin cups. Bake at 375°F for 20-25 minutes, or until the tops are golden brown.
