Peanut Butter Walnut Granola Bars

Ingredients

  • 1 ½ cups old-fashioned rolled oats
  • ¾ cup crushed wheat bran flakes cereal
  • ¼ cup chopped walnuts
  • ¼ cup dried fruit (optional)
  • ½ cup peanut butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 1 large egg
  • Nonstick spray

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 300°F and spray an 8×8 inch baking pan with nonstick spray. Set aside. 
  3. In a large bowl, combine oats, cereal, walnuts, and dried fruit.
  4. Combine peanut butter, honey, and vanilla in a saucepan and heat until peanut butter melts.
  5. Beat egg in a small bowl and pour over dry ingredients. Pour peanut butter mixture over dry ingredients and mix thoroughly.
  6. Transfer to the 8×8-inch baking pan and press mixture down firmly.
  7. Bake at 300°F for 30-40 minutes until golden brown on top.
  8. Remove from oven and let cool completely before cutting into bars.

Makes 10 bars

Butterfly Bites

Ingredients

  • 3 celery stalks
  • 12 twist pretzels
  • 6 Tablespoons creamy peanut butter
  • 3 Tablespoons raisins

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Clean celery with vegetable brush under cool running water. Cut in half crosswise.
  3. Fill center of each celery stick with one tablespoon of peanut butter. This is the body of the butterfly.
  4. Add two pretzels to form the butterfly’s wings.
  5. Use extra pretzel pieces for antenna and raisins for decoration.

Makes 6 servings

Banana Sushi

Ingredients

  • 4 slices whole wheat bread, crusts removed
  • 2 bananas, peeled and ends trimmed
  • 1/2 cup natural-style creamy peanut butter

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Lay two slices of bread on the counter, slightly overlapping. Press the slices together at the seam. Use a rolling pin or cup to gently flatten them.
  3. Spread your favorite nut butter evenly over both of the bread pieces. Lay a whole banana in the middle. Carefully roll up the bread around the banana.
  4. Slice each log into six pieces that are 1 to 1 1/2 inches thick.
  5. Repeat with the remaining bread slices, spread and banana.

Makes 6 servings

Peanut Butter Chicken

Ingredients

  • 1 pound chicken breast
  • 1 Tablespoon canola oil
  • 2 Tablespoon reduced-sodium soy sauce
  • 1 Tablespoon water
  • 4 Tablespoon creamy peanut butter
  • 1-3 Tablespoon brown sugar
  • 1-3 Tablespoon oil (add 1 Tablespoon water if using less than 3 Tablespoon oil)
  • 1 teaspoon ground ginger
  • 3 Tablespoon white vinegar
  • Salt and pepper to taste
 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Dice chicken.
  3. Heat 1 Tablespoon oil in a skillet and brown chicken.
  4. While chicken cooks, make sauce by whisking remaining ingredients together.
  5. When chicken is brown, stir in sauce and cook until chicken is cooked through and sauce is warm.
  6. Serve with brown rice and vegetables.

Baked Peanut Butter Oatmeal

Ingredients

  • 3 cups oatmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 1/4 cup peanut butter
  • 1/2 cup oil
  • 1/2 cup honey
  • 2 eggs, beaten
 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 350°F.
  3. Spray 9x-13-inch baking pan with cooking spray.
  4. Combine oatmeal, baking powder, salt, and milk in baking pan.
  5. In a separate bowl combine oil, honey, eggs, and peanut butter.
  6. Mix all ingredients together.
  7. Cover pan and store in fridge overnight or bake immediately.
  8. Bake at 350°F for 30 minutes.
