Peach Bran Muffins Posted on August 18, 2020August 19, 2020 Ingredients1 1/4 cup whole-wheat flour3/4 cup bran cereal, crushed1/6 cup sugar (about 2 1/2 Tbsp)1 teaspoon baking soda2 teaspoons baking powder1 cup fat-free plain yogurt1 large egg1 teaspoon vanilla1 large peach, diced DirectionsWash hands with warm soapy water for 20 seconds.Combine flour, bran, sugar, baking soda, and baking powder. Mix well.Add yogurt, egg, and vanilla. Stir until dry ingredients are moistened.Fold in diced peach.Coat large muffin cups with non-stick spray and fill 3/4 full with batter.Bake at 400°F for 16-18 minutes.Remove muffin tin from oven and allow to cool for several minutes before removing muffins.Serve warm or at room temperature.Makes 6 servings

Pocket Fruit Pies Posted on August 4, 2020January 10, 2023 Ingredients4 tortillas (8 inch)2 medium peaches, pears, or apples1/4 teaspoon cinnamon2 Tablespoons brown sugar1/8 teaspoon nutmeg2 Tablespoons milkSugar (optional) DirectionsWash hands with warm, soapy water.Preheat oven to 350°F.Briefly warm tortillas in microwave or oven.Wash, peel, and chop fruit into pieces.Place 1/4 of the fruit on each tortilla.In a small bowl, stir together cinnamon, brown sugar, and nutmeg. Sprinkle over fruit.Roll up the tortillas like a burrito.Place on baking sheet (without nonstick spray.) Brush with milk and sprinkle with sugar, if desired.Make small slashes across the pies to allow steam to escape.Bake at 350°F for 8-12 minutes or until lightly brown.Makes 4 servings
