Banana Sushi

Ingredients

  • 4 slices whole wheat bread, crusts removed
  • 2 bananas, peeled and ends trimmed
  • 1/2 cup natural-style creamy peanut butter

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Lay two slices of bread on the counter, slightly overlapping. Press the slices together at the seam. Use a rolling pin or cup to gently flatten them.
  3. Spread your favorite nut butter evenly over both of the bread pieces. Lay a whole banana in the middle. Carefully roll up the bread around the banana.
  4. Slice each log into six pieces that are 1 to 1 1/2 inches thick.
  5. Repeat with the remaining bread slices, spread and banana.

Garden Pasta Salad

Ingredients

  • 1/2 cup macaroni, cooked 
  • 1/4 cup onion, finely chopped
  • 1/2 cup cucumber, finely chopped
  • 1/4 cup green pepper, diced
  • 1 tablespoon vinegar
  • 1/2 tablespoon vegetable oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon parsley, chopped (optional)

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. In a medium-size bowl, combine macaroni, onions, cucumbers, and green peppers. Mix well.
  3. In a separate bowl, mix vinegar, vegetable oil, salt, and pepper. If using parsley, add that too.
  4. Pour the prepared dressing over the pasta. Mix well. 
  5. Cover bowl and refrigerate for 30 to 45 minutes. Serve cold.

Veggie Quesadillas

Ingredients

  • 1 onion (small, peeled and chopped)
  • 1 small zucchini (small, washed and chopped)
  • 1 green bell pepper (washed, seeded and chopped)
  • 1/2 broccoli head (washed and chopped)
  • 1 carrot (scrubbed and shredded)
  • 4 whole wheat tortillas (10-inch)
  • 1 cup cheddar cheese (shredded low-fat)
  • 1/2 cup salsa
  • Cooking oil spray

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Spray a pan with cooking oil.
  3. Chop vegetables. Cook on medium heat for 4-5 minutes, stirring frequently. Remove from pan.
  4. Spray pan with cooking spray. Place one tortilla in the pan. Sprinkle with half the vegetables and half of the cheese.
  5. Place a second tortilla on top. Cook on medium heat for 4-6 minutes or until the cheese starts to melt and the bottom tortilla starts to brown.
  6. Flip quesadilla. Cook for 4 minutes or until tortilla browns.
  7. Repeat steps 4-6 for the other two tortillas.
  8. Cut each quesadilla in half. Serve with salsa.

Veggie Bagel Buddies

Ingredients

  • 3 whole wheat bagels
  • 2 tsp powdered ranch dressing
  • 3 oz low-fat cream cheese
  • 1/2 cup carrots, finely chopped
  • 1/2 cup cauliflower, finely chopped
  • 1/2 cup broccoli, finely chopped
  • 6 Tbsp reduced fat cheddar cheese, shredded

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Split whole wheat bagels into halves and lay face up on a baking sheet.
  3. Mix cream cheese with powdered ranch dressing. Spread onto each bagel half.
  4. Finely chop carrots, cauliflower, and carrots. Mix together in a bowl.
  5. Sprinkle vegetable mix on top of bagels. Top each bagel with 1 Tbsp cheddar cheese.
