Add second 1/4 cup of oats as needed for smooth consistency.Cook in microwave for about 4 minutes. Mug will be hot!Cook for an additional minute if the center is not firm.Carefully remove mug from microwave with hot pad.Makes 1 serving

Baked Oatmeal Posted on January 30, 2020March 24, 2020 Ingredients 2 bananas 1 cup quick oats 1/4 cup chopped pecans 1/2 teaspoon baking powder 3/4 teaspoon cinnamon 1 cup fat-free milk 1 egg 4 Tablespoons honey 1 teaspoon vanilla 1 1/2 cup blueberries Directions Wash hands with warm, soapy water. Preheat oven to 375°F. Coat an 8″x8″ baking dish with cooking spray. In a medium, bowl, combine oats, nuts, baking powder, and cinnamon. Stir. Add milk and egg. Mix well. Add honey and vanilla. Fold in blueberries. Add mixture to baking dish. Lay banana slices on top of mixture. Top with cinnamon, if desired. Bake for 30 minutes, or until the top is golden brown. Makes 6 servings
Apple Oatmeal Muffins Posted on January 23, 2020March 24, 2020 Ingredients 1/2 cup non-fat milk 1/3 cup applesauce 1/2 cup all-purpose flour 1/2 cup quick oats 1/4 cup sugar 1 Tablespoon baking powder 1/2 teaspoon cinnamon 1 apple, choppedNonstick spray Directions Wash hands with warm, soapy water. Preheat oven to 400°F. Coat 6 muffin tins with nonstick spray. Add milk and applesauce in a small bowl. Stir until blended Stir in flour, oats, sugar, baking powder, and cinnamon. Mix until moistened (do not over mix). Gently stir in chopped apple Spoon into muffin tins. Bake for 15-20 minutes or until an inserted toothpick comes out clean. Cool in pan for 5 minutes before serving. Store extra muffins in an airtight container. Makes 6 servings

Preheat oven to 400°F. Coat bread pan with nonstick cooking spray. Combine all ingredients in a large bowl. Stir until well mixed. Pour into a bread pan. Bake for 20-25 minutes. Makes 10 servings
