Fast Lentil Bolognese

Ingredients

  • 1 24-ounce can spaghetti sauce
  • 2 cup cooked lentils
  • 2 cups or 16-ounce package of dry pasta

Directions

  1. Wash hands with warm, soapy water for 20 seconds. 
  2. If lentils are not already cooked, follow package directions and cook first.
  3. Rinse lentils under cold water after cooking.
  4. In a medium sauce pan over medium heat, warm the spaghetti sauce stirring constantly until evenly heated through.
  5. Add the cooked lentils to the spaghetti sauce, and heat through.
  6. Cook pasta according to package instructions.
  7. Combine the sauce and pasta.

Makes 6-8 servings

Beef Stroganoff

Ingredients

  • 14.5-ounce can beef
  • 1/2 cup chopped onion
  • 1/2 cup sliced fresh mushrooms
  • 2 garlic cloves, minced (1 teaspoon garlic powder)
  • 1/8 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups low-sodium broth
  • 6 Tablespoons flour
  • 1 cup plain yogurt or low-fat sour cream
  • 4 cups cooked whole-wheat pasta

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. In a large skillet or electric skillet, heat beef with onions, mushrooms, garlic, salt, and pepper. Remove from skillet.
  3. In the same skillet, mix together 1/2 a cup of broth and flour. Heat, stirring constantly, until thick. Add remaining broth.
  4. Reduce heat to low. Add yogurt and stir until combined.
  5. Add meat mixture and heat through.
  6. Serve over hot whole-wheat pasta.

Makes 4 servings.

Chicken Spaghetti

Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 3 cups or 1 jar of canned spaghetti sauce
  • 3 cups spaghetti pasta
  • Pepper or red pepper flakes (optional)
  • Parmesan cheese (optional)

Directions

  1. Wash hands with warm, soapy water.
  2. Cook spaghetti following package directions. Drain.
  3. In a saucepan or electric skillet, heat chicken in sauce.
  4. Heat through and serve over hot spaghetti noodles. Serve topped with pepper, red pepper flakes, or Parmesan cheese, if desired.

Makes 6 servings

 

Beef Stew & Noodles

Ingredients

  • 1 cup canned beef stew 
  • 2 cups fresh, frozen, or canned vegetables (optional) 
  • 1 cup cooked whole wheat pasta or egg noodles

Directions

  1. Wash hands with warm, soapy water.
  2. In a saucepan on medium high, heat one cup of beef stew. Add in vegetables, if desired, and cook until bubbling or vegetables are tender. 
  3. Pour over cooked, warmed pasta and enjoy. 

Makes 6 servings

Tuna Casserole

Ingredients

  • 1 can tuna in water
  • 1 can cream of mushroom soup
  • 1/3 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon of salt 
  • Dash of pepper
  • 2 cups frozen peas and corn
  • 2 cups cooked pasta
  • 1/4 cup shredded cheese
  • 1/4 cup saltine crackers, crushed
 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 375°F.
  3. Spray 9×13-inch baking dish with nonstick spray.
  4. Add pasta, cream soup, milk, tuna, and frozen vegetables.
  5. Add seasonings. Stir together.
  6. Bake at 375°F for 30 minutes.
  7. Remove from oven and top with cheese and crackers.
  8. Bake 10 minutes more.

Makes 6 servings

Pasta Skillet Meal

Ingredients

  • 3/4 cup whole-wheat pasta, cooked 
  • 1 cup pork lion, cubed 
  • 1 can cream of mushroom soup
  • 1 can corn
  • 1 cup green pepper
  • 1/2 cup onion
  • 1 3/4 cup water
  • 1 cup whole-grain pasta, uncooked
  • 1 tsp parsley
  • 1/2 tsp garlic powder

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Turn skillet to medium-high heat. 
  3. 2. Add pork, soup, vegetables, pasta, and water. Stir.
  4. Add seasonings and stir.
  5. Cover and let come to a boil.
  6. Cook 30 minutes. Stir occasionally to prevent sticking.
  7. Serve hot.
