Bean Cookies

Ingredients

  • 2 cups oatmeal
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • 15 ounce can white kidney beans
  • 1/4 cup butter
  • 1/2 cup ground flaxseed (optional)
  • 1 cup chocolate chips
 

Directions

  1. Wash hands with warm, soapy water.
  2. Preheat oven to 350°F. Spray a cookie sheet with cooking spray. [You can add a layer of tin foil to help prevent sticking.]
  3. Add all ingredients except chocolate chips to a blender. Blend well until mixed.
  4. Fold in chocolate chips. Mix well.
  5. Scoop batter into small cookies. Bake for 10-12 minutes, or until lightly browned.

Makes 30 servings

Notes

  • Blend beans first if ingredients are not mixing well. Add water a little at a time to help the blender work smoothly.
  • If you don’t have a blender, you can combine ingredients in a bowl. First mash the beans with a rolling pin, fork, or other kitchen tool.
  • Bulk containers of flaxseed are usually available at grocery or warehouse stores, which costs less than smaller containers. Flaxseed can be stored for a long time. Add it to oatmeal, smoothies, stews, and baked goods, and many other recipes for added fiber and Omega-3s.

Crustless Pumpkin Pie

Ingredients:

  • 3/4 cup sugar
  • 1/2 cup CNP Master Mix
  • 2 Tablespoons canola oil
  • 1 12-ounce can fat-free evaporated milk
  • 2 eggs
  • 1 15-ounce can pumpkin
  • 3 1/2 teaspoons pumpkin pie spice
  • 2 1/2 teaspoons vanilla
  • Nonstick spray

Directions:

  1. Wash hands thoroughly with warm water and soap. 
  2. Preheat oven to 350°F
  3. Combine all ingredients in a medium bowl and beat 2 minutes or until smooth.
  4. Coat a 9-inch pie plat with nonstick spray. Pour mixture into pie plate.
  5. Bake at 350°F for 50-55 minutes or until a knife inserted in the center comes out clean.
  6. Refrigerate leftovers.
Makes 8 servings.

Dutch Apple Yogurt Dessert

Ingredients

  • 1/2 cup yogurt, non-fat vanilla
  • 1/2 cup applesauce
  • 1 Tablespoon raisins
  • 1/8 teaspoon cinnamon
  • 1 teaspoon brown sugar
  • 1 Tablespoon nuts

Directions

  1. Wash hands thoroughly with warm water and soap.
  2. Combine all ingredients in a small bowl.
  3. Cover and refrigerate until chilled.
  4. Eat and enjoy as a snack or as a dessert.
Makes 2 servings. 

Cinnamon Apple Muffins

Ingredients*

  • 3/4 cup all-purpose flour
  • 3/4 cup whole-wheat flour
  • 3/4 cup sugar or sweetener
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1/3 cup unsweetened applesauce
  • 1 egg
  • 2/3 cup low-fat milk
  • 3 small apples, diced

Directions

  1. Wash hands thoroughly with warm water and soap.
  2. Preheat oven to 400°F and lightly spray muffin pan with cooking spray.
  3. Mix all-purpose flour, whole-wheat flour, Splenda, salt, baking powder, and cinnamon in a large bowl.
  4. In a separate bowl, mix together the applesauce, egg and milk.
  5. Pour applesauce mixture into flour mixture and stir until just blended; fold in diced apples.
  6. Spoon mixture into muffin pan and bake for 25 minutes.
Makes 12 muffins
