Banana Bread

Ingredients

  • 2 eggs
  • 1/3 cup low-fat milk
  • 1/3 cup sugar
  • 1/2 teaspoon baking soda
  • 11/4 cups mashed bananas (about 3 bananas)
  • 21/2 cups CNP Master Mix (click link or download the recipe card below)
  • 1/4 cup chopped nuts (optional)
  • Nonstick spray

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 350°F.
  3. Spray a 9x5x3-inch with nonstick spray.
  4. Beat eggs, water, and sugar in a bowl until well blended. Add baking soda and bananas.
  5. Stir in CNP Master Mix and nuts until all dry ingredients are coated.
  6. Pour into a 9x5x3-inch loaf pan.
  7. Bake at 350°F for 40 – 45 minutes or until brown.

Makes 1 loaf, 8 servings.

Fruit and Nut Muffins with Streusel Topping

Ingredients

For the muffins

  • 3 cups + 2 Tablespoons CNP Master Mix 
  • 3 Tablespoons sugar
  • 1 egg, beaten
  • 1 1/4cups low-fat milk
  • 2 Tablespoons chopped nuts
  • 1/2 cup drained and chopped fruit (fresh, frozen, or canned)
  • Nonstick spray or muffin tin papers

For the topping

  • 1/3 cup white or brown sugar
  • 2 Tablespoons margarine or butter
  • 1/2 cup crushed toasted oat cereal
  • 2 Tablespoons nut pieces
  • 1 teaspoon cinnamon

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 400°F.
  3. Coat 12 muffin pan cups with nonstick spray or place muffin papers in each tin.
  4. Combine CNP Master Mix and sugar.
  5. In a separate bowl, blend together egg and milk. Add to dry ingredients. Stir gently just until dry ingredients are moistened. Mixture should be lumpy.
  6. Fold in chopped almonds and pears.
  7. Fill each muffin tin 2/3 full.
  8. Bake at 400°F for 20 minutes.

Makes 12 servings

Spicy Cereal Mix

Ingredients

  • 2 Tablespoons extra-virgin olive oil
  • 1 Tablespoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon Kosher salt
  • 3 cups rice cereal squares
  • 1 cup cornflakes
  • ⅔ cup whole-grain pita chips, broken into small pieces
  • ½ cup unsalted pumpkin seeds (pepitas)

 

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. Preheat oven to 350°F.
  3. Whisk the olive oil, Worcestershire sauce, hot sauce, garlic powder, cumin, onion powder, cayenne and salt in a bowl.
  4. Combine the cereals, pita chips, and pepitas in a bowl.
  5. Toss with the spice mixture and spread evenly on a baking sheet.
  6. Bake, stirring occasionally, until golden, 20 to 40 minutes.

Peanut Butter Pretzel Bars

Ingredients

  • 1 cups rolled oats
  • 1/2 cup chopped peanuts
  • 4 mashed bananas
  • 1 cup peanut butter
  • 1/2 cup chopped whole-grain pretzels

Directions

  1. Wash hands with warm, soapy water.
  2. Preheat oven to 350°F.
  3. Place oats and peanuts in a 9″x13″ baking dish (or two 8″x8″ dishes) in a single layer. Bake about 10 minutes. Set aside and cool.
  4. Heat peanut butter and bananas in microwave or stovetop. Stir well to combine and let cool.
  5. Line baking dish with parchment paper
  6. Combine oats, peanuts, pretzels, and banana mixture.
  7. Spread mixture into baking dish and bake for 25-30 minutes.
  8. Carefully remove from parchment paper. Serve warm.
