Fruity Overnight Oats

Ingredients

  • 1 cup low-fat yogurt
  • 1 cup old-fashioned rolled oats
  • ½ cup low-fat or fat-free milk
  • ½ teaspoon cinnamon
  • ¼ teaspoon dried ginger (optional)
  • ½ cup dried fruit
  • ½ cup chopped apple
  • ½ cup blueberries
  • ¼ cup chopped walnuts

Directions

  1. In medium bowl, combine oats, yogurt, and milk. Stir until combined
  2. Cover and refrigerate for 6 to 12 hours, or overnight.
  3. After refrigerating, add dried and fresh fruit, and mix gently.
  4. Serve in small bowls.
  5. Sprinkle each serving with chopped nuts. Refrigerate leftovers within 2 hours.

Makes 5 servings

CNP Blueberry Pancakes

Ingredients

  • 2½ cups CNP Master Mix
  • 1½ cups low-fat milk
  • 1 egg, beaten
  • 1 cup frozen blueberries, thawed
  • Nonstick spray
  • Toppings: fruit, yogurt, peanut butter, honey, syrup, etc. 

Directions

  1. Combine CNP Master Mix, milk, and egg. Stir until just combined.
  2. Add blueberries and mix until blueberries are evenly spread throughout the batter.
  3. Coat griddle, skillet, or electric skillet with nonstick spray.
  4. Drop batter by ¼-cup scoops onto hot surface.
  5. Flip when bubbles appear on the surface of the pancakes. Cook until well browned on both sides.
  6. Top with your favorite toppings

Makes 12-14 pancakes

Winter Fruit Crisp

Ingredients

  • 4 cups diced apples or pears
  • 2/3 cup packed brown sugar
  • ½ cup all-purpose flour
  • ½ cup rolled oats
  • 1/3 cup margarine
  • 1 teaspoon cinnamon

Directions

  1. Wash hands with warm, soapy water for 20 seconds. 
  2. Heat oven to 375°F. Lightly spray or oil a square pan (8 x 8 x 2 inches).
  3. Wash apples or pear. Core and cut into small, bite-sized pieces.
  4. Arrange fruit in pan.
  5. In a small bowl, mix remaining ingredients, then sprinkle over fruit.
  6. Bake until topping is golden brown and fruit is tender, about 30 minutes.

Makes 8 servings

Cinnamon Orange Slices

Ingredients

  • 2 medium oranges 
  • Ground cinnamon and/or ground ginger 

Directions

  1. Peel the oranges, removing white pith. Cut the oranges horizontally into ¼ to ½ inch thick slices. Remove seeds.
  2. Arrange slices on serving plates. Sprinkle orange slices lightly with cinnamon and/or ginger. 

Makes 2 servings

Tip: Try baking oranges in oven at 350 degrees Fahrenheit for 15 minutes.

Watermelon Salsa

Ingredients

  •  2 cup seeded and coarsely chopped watermelon
  • 2 Tablespoons of chopped onion
  • 3 Tablespoons seeded, chopped chili pepper of choice
  • 2 Tablespoons balsamic vinegar
  • 1/4 teaspoons garlic salt

Directions

  1. Wash hands with warm, soapy water for 20 seconds.
  2. In a serving bowl, mix together the watermelon, onion, and chili pepper.
  3. Season with balsamic vinegar and garlic salt.
  4. Cover and refrigerate for at least one hour to blend flavors.

Makes 16 servings
