10-Minute Chili Posted on December 20, 2021December 22, 2021 Ingredients ½ pound lean, ground beef 1 small onion, chopped 16-ounce can kidney beans 16-ounce can tomato sauce 1-2 Tablespoons chili powder Directions Cook ground beef and onion together in a saucepan. Transfer mixture to colander set over a bowl and rinse with warm water to remove grease. Return to saucepan. Add the kidney beans, tomato sauce, and chili powder to the saucepan. Cook over medium heat until heated through. Makes 4 servings
Yogurt Covered Strawberries Posted on December 20, 2021January 27, 2022 Ingredients 12 strawberries 1 cup low-fat vanilla yogurt Directions Dip strawberries in vanilla yogurt. If strawberries are large, it may be helpful to slice them into bite-sized pieces before dipping them in yogurt. Place on a baking sheet lined with wax paper. Freeze strawberries until yogurt is set. Makes 12 strawberries
Pesto Pizza Posted on December 20, 2021March 2, 2022 Ingredients½ loaf Italian or French bread (split lengthwise)½ cup pesto¼ mozzarella cheese (low fat, shredded)¼ cheddar cheese (low fat, shredded)¼ parmesan cheese (grated)3 Tablespoons green pepper (chopped)3 Tablespoons mushrooms (fresh or canned, sliced)¼ cup spinach leavesVegetable toppings (other, as desired, optional)DirectionsWash hands with warm soapy water for 20 seconds.Preheat oven to 350°F.Toast the bread until slightly brown, about 5 minutes.Remove from oven, top bread with pesto, vegetables and cheeses. Return bread to oven and heat until cheese melts, about 7-9 minutes.Makes 2 servingsNote: This recipe can also be made in a toaster oven.

Green Beans, Cranberries and Nuts Posted on November 17, 2021December 2, 2021 Ingredients1 8-oz. can of green beans (½ lb. fresh or 2 cups frozen) ¼ cup dried cranberries 1½ Tablespoon chopped nuts (such as sliced almonds) 1 Tablespoon honey (optional) 1 teaspoon lemon pepper salt  DirectionsDrain and rinse green beans. If using fresh, snap into 4 inch pieces and cook until soft. Add cranberries, honey and nuts and stir well.  Serve hot, sprinkled with choice of seasonings.Makes 4 servings
